Blueberry Streusel

A delicious streusel with blueberries and applesauce

  • cups 2 all-purpose flour
  • tsp 1.5 baking powder
  • tsp half salt
  • cup three quarters SugarTwin® Granulated White
  • tsp one baking soda
  • cup half unsweetened applesauce
  • 2 eggs
  • cup quarter vegetable oil
  • cup three quarters skim milk
  • tsp half lemon juice
  • cups 1.5 blueberries (dusted with flour)
  • tbsp 2 SugarTwin® Granulated Brown
  • tsp 1 cinnamon
  • cup quarter walnuts (chopped)


1. Combine first five ingredients in large bowl. 2. Combine applesauce, eggs, vegetable oil, skim milk and lemon juice in a bowl and mix well. 3. Gradually add flour mixture to egg mixture and combine well, fold in blue berries. Spread cake mixture in an 8 square pan (20cm). 4. Combine Streusel Mix and sprinkle over batter. 5. Bake in a preheated 350*F (180*C) for 35-40 minutes or until a cake tester comes out clean.
